Ingredients

For the Pasta:

  • 1 pound (16 oz) cavatappi pasta (or elbow macaroni)

  • 1 tablespoon salt (for pasta water)

For the Cheese Sauce:

  • 4 tablespoons unsalted butter

  • 4 tablespoons all-purpose flour

  • 3 cups whole milk, warmed

  • 1 cup heavy cream

  • 8 oz Gruyère cheese, freshly grated

  • 8 oz white cheddar cheese, freshly grated

  • 4 oz Parmigiano-Reggiano, freshly grated (plus extra for topping)

  • 2-3 teaspoons truffle oil (adjust to taste)

  • 1 tablespoon truffle paste or minced black truffle (optional)

  • 1 teaspoon Dijon mustard

  • ½ teaspoon garlic powder

  • ¼ teaspoon freshly grated nutmeg

  • Salt and white pepper to taste

Instructions

  1. Bring a large pot of water to a rolling boil. Add salt.

  2. Add pasta and cook until al dente, about 1-2 minutes less than package instructions.

  3. Drain pasta, reserving ½ cup of pasta water. Do not rinse.

Prepare the Topping

  1. In a small bowl, combine panko breadcrumbs, melted butter, fresh herbs, and grated Parmigiano-Reggiano.

  2. Sprinkle the mixture evenly over the mac and cheese.

Bake and Serve

  1. Bake uncovered for 25-30 minutes until bubbling around the edges and the topping is golden brown.

  2. Let stand for 5 minutes before serving.

  3. Garnish with fresh chives, a light drizzle of truffle oil, and shaved truffle if using.

Chef's Notes

  • For the best flavor, grate your cheese fresh rather than using pre-shredded varieties which contain anti-caking agents.

  • Truffle oil varies in intensity, so start with a smaller amount and add more to taste.

  • This dish pairs beautifully with a simple green salad dressed with lemon vinaigrette to cut through the richness.

  • For a more intense truffle flavor, add truffle salt to the breadcrumb topping.

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F covered with foil until warmed through.

This Creamy Truffle Mac & Cheese transforms a beloved classic into an elegant dish worthy of the finest table. The earthy aroma of truffle perfectly complements the rich, creamy cheese sauce, creating a truly memorable dining experience that will have everyone asking for seconds.
