Ingredients
For the Steak:
2 ribeye or New York strip steaks (1½ inches thick, about 12 oz each)
2 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
For the Garlic Butter:
4 tablespoons unsalted butter, softened
3 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 teaspoon fresh thyme leaves
½ teaspoon fresh rosemary, minced
¼ teaspoon salt
Zest of half a lemon
Instructions
Prepare the Garlic Butter
In a small bowl, combine softened butter, minced garlic, parsley, thyme, rosemary, salt, and lemon zest.
Mix thoroughly until all ingredients are well incorporated.
Transfer to a piece of plastic wrap, shape into a log, and refrigerate until ready to use.
Roast the Vegetables
Preheat your oven to 425°F (220°C).
In a large bowl, toss all vegetables with olive oil, minced garlic, Italian herbs, salt, and pepper until evenly coated.
Spread vegetables in a single layer on a large baking sheet.
Roast for 25-30 minutes, tossing halfway through, until vegetables are tender and beginning to caramelize at the edges.
Tips for the Perfect Steak
Allow your steaks to come to room temperature before cooking for even cooking.
Use a meat thermometer for precision: 125°F for rare, 135°F for medium-rare, 145°F for medium.
Let your steaks rest after cooking to allow juices to redistribute throughout the meat.
Slice against the grain for maximum tenderness.
For extra flavor, consider dry-brining your steaks by salting them and leaving uncovered in the refrigerator for 24 hours before cooking.
This Garlic Butter Steak with Roasted Veggies is elegant enough for a special occasion but simple enough for a weeknight treat. The richness of the garlic butter pairs perfectly with the tender steak, while the roasted vegetables add color, nutrition, and complementary flavors to complete this satisfying meal.
